MARIQUITAS 
2 green plantains or 3 green bananas
Canola oil for frying
Salt to taste

Slice and peel plantains as described above. Heat at least 2 inches oil to 375 degrees in large deep skillet.

Cut plantains lengthwise into paper thin strips, using mandoline or grater. Drop them one by one into the oil.

Fry mariquitas 1 to 2 minutes or until crisp and golden brown. Drain on paper towels. Sprinkle with salt and serve at once. Serves 6 to 8.
