1 (16 oz.) pkg. sugar-free, lime flavored gelatin
2 c. boiling water
2 c. cold water
2 tbsp. low calorie mayonnaise
1 c. low-fat cottage cheese
1 (8 1/4 oz.) can crushed, juice packed pineapple, drained
Vegetable cooking spray
Lettuce leaves (optional)

Developed for diabetics or if on low-fat, low-cholesterol diet or if you just like to eat health.

Dissolve gelatin in boiling water, stirring well. Stir in cold water. Chill until consistency of unbeaten egg whites. Fold mayonnaise into gelatin. Add cottage cheese and pineapple, stirring well. Pour into 6 cup mold coated with cooking spray, chill until firm, unmold onto lettuce leaves if desired.

Serving amount 1/2 cup. Exchanges 1/2 skim milk. Cholesterol 2 mg. Calories 32. Carbohydrates 3 gm. Protein 3 gm. Fat 1 gm. Fiber trace. Sodium 57 mg.
