|APPLE-CURRY CHICKEN BREAST|
1 skinned, boned chicken breast
1/2 c. applesauce
2 cloves garlic, minced
1/2 tsp. curry powder
Dash round red pepper
4 tbsp. long grain rice (optional)
Place a 15x12 inch piece of aluminum foil in a baking dish-dull side down, cupping sides slightly. Place chicken breast in center.
Mix in a bowl, applesauce, garlic, curry, pepper and paprika. Spread mix over top of chicken breast. Fold opposite sides of foil together, then fold ends to seal. Bake in a 400 degree oven (for 30 minutes).
Remove from oven and open packet. Add uncooked rice to juice. Close packet tightly. Return to oven and bake 25-30 minutes longer until chicken and rice are tender. Makes 2-3 servings depending on size of chicken breast.
