FRESH STEAMED BROCCOLI WITH CHEESE
SAUCE
 
1 lb. fresh broccoli
1/4 c. butter
Salt
Pepper
1/2 c. Velveeta cheese (more or less to taste)

Wash broccoli and cut flower heads from stems. Discard stems (thick sections). Place flower heads in double boiler type steamer basket. Add about 1 inch of water to bottom of double boiler. Cover and place on high heat. Bring to boil and steam for about 5 minutes. Melt butter and cheese separately while steaming broccoli. Remove from heat. Place broccoli in serving bowl and add salt and pepper to taste. Drizzle butter and cheese over broccoli and serve.

Short Cut: Substitute "Eazy Cheese" for Velveeta and skip melting cheese.
