Place defrosted frozen turkey breast (about 5 pounds), skin side down, in rectangular microwaveable dish. Sprinkle with salt and white pepper. Add 1 cup water. Cover tightly and microwave on high for 10 minutes.
Microwave on medium (50%) 25 minutes; turn turkey breast over. Cover and microwave until meat thermometer registers 185 degrees for 20 to 30 minutes longer.
Remove turkey from broth; refrigerate at least 1 hour but not longer than 2 days. Slice and serve or remove meat from bones and skin and cut up for use in salads and other recipes calling for leftover turkey. Yields: About 6 cups of cut up turkey.
