FRIED RAINBOW TROUT 
2 lbs. trout
1 tsp. salt
1/8 tsp. pepper
1 egg
1 tbsp. milk or water
1 c. meal

Salt and pepper both sides of fish. Beat egg; add milk or water dip fish in egg, then roll in meal. Place in hot fat or cooking oil. Fry until fish is brown on one side, then carefully turn and brown on other side. Fry about 10 minutes or longer. Drain on paper towels.
