POTATO CHEESE CASSEROLE
 

2 lbs. baking potatoes, peeled and diced into 2 inch pieces
1 clove minced garlic
2 tbsp. butter
1/2 c. half and half
1/4 tsp. pepper
1/2 c. thinly sliced green onion
4 oz. cream cheese, cubed
3/4 tsp. salt
8 oz. cold Brie with rind removed, diced into pieces

Cook potatoes in boiling, salted water for 15 minutes and drain well. Saute garlic and onions in butter until soft. Mash potatoes and beat in garlic mixture, cream cheese, half and half, salt and pepper. Fold in Brie. Bake at 450 for 15 minutes until tops begin to lightly brown.
