ENCHILADA CASSEROLE
 

1 pkg. tortillas
1 lb. lean ground beef or ground turkey
1 med. onion, chopped
1 (16 oz.) can refried beans
1/2 c. tomato sauce
1/4 c. chopped pitted ripe olives
1 jalapeno pepper, chopped
1 (10 oz.) can mild enchilada sauce
1 (15 oz.) can tomato sauce
1 c. grated cheese

Soften tortillas according to directions on package. Microwave meat with chopped onion until meat is browned. Drain. Mix together meat mixture, beans, 1/2 cup tomato sauce, olives, pepper. Place 1 to 2 tablespoons meat mixture inside tortilla; roll. Place seam side down into a microwave 13"x9"x2" dish. Combine enchilada sauce to remaining tomato sauce; mix well. Pour over filled tortilla. Top with cheese and microwave 3 to 5 minutes or until cheese melts on High.
