REUBEN CASSEROLE
 

1 (1 lb.) can sauerkraut, drained
1 tsp. caraway seed
2 c. (8 oz.) shredded Monterey Jack cheese
1/2 c. Thousand Island dressing
1 lb. cubed turkey, cooked
4 thick slices rye bread, cut in 1/2 inch cubes
1/3 c. melted butter
2 tbsp. chopped fresh parsley

Place drained sauerkraut loosely in 10-inch glass pie plate. Sprinkle with caraway seeds, 1 cup cheese, dressing, turkey, and then remaining cheese. Toss bread cubes with melted butter. Sprinkle over cheese. Microwave on medium about 10 minutes or until cheese is heated through. Garnish with chopped parsley. 6 servings of 1 cup each.
