CRAB CAKES, CASSEROLE OR DIP
 

1 lb. crab meat (2 c.)
1 tsp. grated cheese, onion
2 tsp. Worcestershire sauce
Juice of 1/2 lemon, lg.
5 Saltines, crumbled (use more to stiffen)
1/2 c. mayonnaise
1/4 tsp. cayenne pepper
2 tbsp. butter
3 tbsp. flour, heaping
1 egg, beaten
1 c. milk

Make white sauce using butter, flour, and milk. Let cool. Add egg, mayonnaise, salt, pepper to taste, chives, Worcestershire sauce, lemon juice, and cayenne pepper. Add crumbs, fold in crab meat carefully. Make cakes and brown in shortening. If put in casserole, make white sauce thinner or double number of cracker crumbs. Bake casserole 20-30 minutes at 400 degrees. Dip made same as casserole.
