BACON GRITS CASSEROLE
 

1 c. quick grits
4 c. water
1 c. sharp cheddar cheese, grated
1 pkg. bacon
1/2 c. milk
1 dash salt
1 stick butter
6 eggs

Cook grits with water and salt according to package directions. Add butter and cheese; cook over low heat until melted. Cool. Stir in 2 beaten eggs. Pour in 2 quart casserole dish. Set aside.

Fry bacon until crisp. Crumble and sprinkle over grits, reserving 1/2 cup bacon crumbs. Beat 4 eggs and milk. Pour egg mixture over bacon and grits. Bake at 350 degrees for 50 minutes. Sprinkle top with remaining bacon crumbs. Serve hot. Yields 6 servings.
