1/3 c. butter, softened 1/3 c. brown sugar 1/2 c. coconut 1 pkg. blueberry muffin mix 1 (8 1/2 oz.) can crushed pineapple, drained Preheat oven to 400 degrees. Mix butter, sugar, coconut and set aside. Make muffin mix as directed - fold in pineapple. Pour into pan and spoon the coconut mixture over batter. Bake 25 to 30 minutes. |
