FRESH APPLE CAKE
 

1/2 c. butter
1 1/2 c. sugar
1 (8 oz.) carton low-fat plain yogurt
1 egg
2 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
3 c. cored and chopped apples (1 lb.)
1 c. chopped nuts
2 1/2 c. flour

Cream butter and gradually add sugar. Add yogurt and egg and beat until fluffy. Combine dry ingredients and stir into creamed mixture. Add apples and nuts and mix until blended. Pour batter into a greased and floured 13 x 9 x 2 inch cake pan. Bake at 350 degrees for 50-60 minutes or until a wooden pick inserted near center comes out clean. Makes 24 (2 1/4 x 2 inch) servings.
