ALL PURPOSE SPONGE CAKE
 

1 c. sugar
2 eggs
1 tsp. vanilla
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. milk, scalded
2 tbsp. butter, melted

Beat together sugar, eggs and vanilla. Add flour, baking powder and salt. Add milk and butter. Bake in greased 9"x9" pan for 25 minutes. Good plain or sprinkled with powdered sugar/frosting; or use as a shortcake with strawberry or peach toppings.
