Cake: 4 eggs 2 c. sugar 1 c. salad oil 2 c. canned pumpkin 2 c. all purpose flour 2 tsp. soda 2 tsp. cinnamon 1/2 tsp. salt Cream Cheese Icing: 1/2 c. butter, softened 1 (8 oz.) pkg. cream cheese 1 (1 lb.) box powdered sugar 2 tsp. vanilla Combine all cake ingredients in a large mixing bowl. Beat with an electric mixer until thoroughly blended. Pour batter into a buttered and floured 13"x9"x2" pan. Bake at 350 degrees for 35 to 40 minutes, or until cake tests done. Cool. Prepare Cream Cheese Icing. Combine icing ingredients in a mixing bowl. Beat with an electric mixer until smooth. Spread on cooled cake. Makes 10-12 servings. |
