ENGLISH ROCK CAKES
 

1/2 lb. self-rising flour
1/4 lb. butter
1/2 c. granulated sugar
4 oz. raisins
1 egg, beaten
2 to 4 tsp. milk

Sift flour into bowl. Rub in butter finely. Add sugar and fruit. Mix to very stiff batter with beaten egg and milk. Place 10 spoonfuls of mixture, in rocky mounds, on well-buttered baking tray (allow room between each as they spread slightly). Bake just above center of oven at 400 degrees for 15 to 20 minutes. Cool on wire rack. Makes 10 cakes.
