FRESH APPLE CAKE
 

3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 c. cooking oil
2 eggs
2 tsp. vanilla
2 c. sugar
3 c. chopped fresh apples

Preheat oven to 375 degrees. Grease and flour Bundt or tube cake pan. Sift together flour, baking soda, salt and cinnamon in large mixing bowl. Combine oil and sugar and cream thoroughly. Add eggs and vanilla and continue beating until lightly fluffy. Add dry ingredients and apples. Beat on slow speed until thoroughly blended. Pour into Bundt or tube pan and bake 1 hour and 15 minutes.
