JENNY'S CHEESECAKE
 

CRUST:

2 oz. butter
3 tbsp. sugar
1 tsp. baking powder
1 c. flour
1 egg

Cream butter and sugar. Add flour and baking powder. Add egg and mix well. Put by hand in 5 x 9 Pyrex baking dish.

FILLING:

8 oz. Philadelphia cream cheese
7 tbsp. sugar
1 tbsp. flour
2 lg. eggs, separated
1 tsp. vanilla
1 tbsp. Realemon juice
2 c. milk

Cream cheese and sugar. Add flour and egg yolk. Add vanilla and lemon juice. Add milk. In separate bowl beat egg whites until stiff. Fold into cream mixture until well blended. Pour batter into uncooked crust. Sprinkle top with cinnamon. Bake 40 to 45 minutes at 325 degrees. Test with knife must be clean.
