ICE BOX COOKIE CAKE
 

1 pkg. Jello chocolate pudding & pie filling
1 env. (1 tbsp.) plain gelatin
1 3/4 c. cold water
1 pt. chocolate ice cream
38 Nabisco coconut bars (snack size), about 1/2 box

Combine pudding mix, gelatin and cold water. Cook according to package directions. Cool about 5 minutes. Stir once or twice. Then add ice cream. Stir until melted.

Arrange 6 cookies in the bottom of a greased 9 x 5 inch loaf pan. Pour 1/3 of the pudding over the cookies. Then place 12 cookies on the top of pudding and 4 cookies against both long sides of pan. Continue layering pudding and cookies, making 3 layers of each. Chill until firm (at least 1 hour).

To unmold, draw a knife around sides of pan, turn cake onto serving plate. Garnish with whipped cream. Makes 8 servings.
