ANISE BISCOTTI
 

4 c. flour
2 c. sugar
6 eggs
1 c. butter, melted
1 1/2 c. walnuts, chopped
2 to 3 tsp. anise flavor
2 tsp. baking powder
For a crunchier texture, 1 1/2 c. whole grained flour may be substituted for an equal part of white flour

Preheat oven to 375 degrees. Grease or oil cookie sheet. Begin by beating eggs well, adding sugar and melted butter. Add anise flavor. Work in 4 cups of flour, walnuts and baking powder. After all is mixed well, take enough dough to roll out a strip a little less than the size of a halved cookie sheet - 3 inches wide and 1 inch thick. Set 2 rolls per oiled cookie sheet. Bake at 375 degrees for 25 to 30 minutes until brown. Remove from oven and cut rolls diagonally in about 1 1/4 inch strips. Return to oven and toast for 8 to 10 minutes.
