APPLE CAKE
 

1/2 c. butter
4 c. sugar
2 c. sifted cake flour
2 1/2 tsp. baking powder
1/2 tsp. salt
2 eggs
1 tsp. vanilla
2/3 c. milk
4 to 6 apples, diced or cut in chunks
1 tsp. cinnamon

Preheat oven to 350 degrees. Grease pans lightly and coat with flour. Soften butter in large mixing bowl. Add sugar and apples, salt, eggs, vanilla, milk, cinnamon and baking powder. Blend ingredients, adding flour slowly. Pour in pans and bake for about 25 or 30 minutes, until cake is golden brown and springs back when lightly touched in center. Place pans on wire rack towel for about 5 minutes. Refrigerate after cooling.
