APPLE DATE CAKE
 

1 box Pillsbury date bread mix
1/2 c. brandy
1 c. applesauce
1 c. raisins
1 egg
1 tbsp. oil
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. salt
1/2 c. sugar
1/3 c. chopped walnuts
4 med. apples, peeled, cored & sliced
1/4 c. sugar
2 tsp. cinnamon

Mix all ingredients except the last three. Use medium speed on an electric mixer or by hand until well blended. Pour into a greased and floured 11" x 7 1/2" pan. Arrange apple slices in 3 even rows. Sprinkle with sugar and cinnamon mixture. Bake at 325 degrees for 55 to 60 minutes or until toothpick comes out clean. Serve warm or cold with whipped cream.

Suggestion: Add 1/4 to 1/2 cup more brandy to finished cake. Seal in plastic bag for at least a week. Better than fruit cake.
