3 c. flour 3 tsp. baking powder 3 tbsp. sugar 1 c. butter 2 eggs, beaten 1/2 c. cream 1 tsp. vanilla Mix flour and butter like pie crust. Add rest of ingredients. Roll 1/4 inch thick. Cut with doughnut cutter (like my mom did), or cut 1 x 3 inch rectangles, slash one edge and form in semi circles on cookie sheet. Brush with slightly beaten egg white and sprinkle with crushed loaf sugar. My mom baked them plain and frosted with white boiled frosting, and let dry. Bake at 375 degrees (I think). DIABETIC APPLESAUCE COOKIES 1 stick (1/4 lb.) butter 1/2 c. brown sugar Twin 1 egg or substitute 1 c. unsweetened applesauce 1 tsp. vanilla 1 tsp. baking soda 1/2-1 c. sifted flour 1/2 tsp. cloves 1/2 tsp. cinnamon 1 tsp. salt (optional) 1/2 tsp. nutmeg 1 c. seedless raisins 1 1/2 c. quick cooking oatmeal Cream butter, sugar Twin and egg in a bowl. Mix in applesauce and vanilla. Combine flour, baking soda, cloves, cinnamon, salt and nutmeg together in a large bowl. Combine contents of both bowls and beat well. Fold in raisins and oatmeal. Preheat oven to 375 degrees. Spray cookie sheet with Pam. Drop mixture by teaspoons onto sheet. Bake 12-15 minutes until firm. |
