CHAMPION SPONGE CAKE MIX
 

1 1/4 c. sifted flour
1 1/4 tsp. baking powder
1/2 tsp. salt
4 egg yolks
1 1/4 c. sugar
4 egg whites
1 tsp. vanilla
1 tsp. grated lemon rind
2/3 c. boiling water

Sift flour, salt and baking powder. Beat egg whites until light; add 3/4 cup sugar and beat until peaks form. Beat egg yolks until light; add 1/2 cup sugar. To egg yolks add vanilla, lemon rind, boiling water and flour; beat well. Fold in egg whites. Pour into tube pan. Bake at 350 degrees for about 1 hour or until done.
