LANE CAKE
 

Those years when Grandmother didn't make a fruit cake she would be sure to have this Lane Cake.

Make up your best plain white layer cake recipe. Sift your flour 2 extra times for lighter texture and turn out 2 or 3 layers. Then make up this filling with:

8 egg yolks
1 heaping c. sugar
1/2 c. butter
1 c. chopped raisins
1 c. coconut
1 lb. English walnuts or other nuts
1 glass wine or blackberry nectar
1 tsp. vanilla

Beat the egg yolks well and stir in the sugar and butter. Cook over hot water in your double boiler until thick stirring constantly. When done and still hot, put in the rest of the ingredients. Spread between layers and if you want to make this a pretty holiday cake cover it with white icing.

Use your favorite recipe for a 3 layer white cake.

FILLING:

8 egg yolks
2 c. sugar
Juice of 2 lemons
1/2 stick of butter

Mix and cook in double boiler when thick add:

1 sm can crushed pineapple (drained)
1 c. grated coconut

Continue cooking, add:

1 c. candied cherries
1 c. chopped nuts

Continue cooking when thick remove from heat, add:

1 tbsp. vanilla
2 tbsp. bourbon

Mix well, let cool and spread between layers. Frost entire cake with fluffy white icing.
