BANANA CAKE WITH CREAM CHEESE FROSTING
 

1/2 c. butter
1 box (1 lb.) confectioners' sugar
1 (8 oz.) pkg. cram cheese
1 tsp. vanilla

Cream first 3 ingredients. Add vanilla. Frost between layers and top and sides of cake. Sprinkle with chopped walnuts.

Place 2 teaspoons lemon juice in measuring cup. Add milk to make 2/3 cup (sour milk). Sift 2 2/3 cups flour, 1 2/3 cups sugar, 1 1/4 teaspoons baking powder, 1 teaspoon salt and 1 teaspoon baking soda in a large mixing bowl. Add 2/3 cup Crisco, 2/3 cup mashed ripe banana and sour milk (above). Mix until flour is dampened. Beat vigorously for 2 minutes. Add 2 eggs and beat 2 minutes longer. Stir in 2/3 cup chopped walnuts (optional). Bake in 2 greased, floured cake pans at 350 degrees for 35 minutes.
