LAYERED APPLE CAKE
 

3 lg. apples
5 tbsp. sugar
2 tsp. cinnamon
1 c. soy bean oil
2 1/2 c. sugar
4 eggs
3 c. flour
1 tbsp. baking powder
1/2 tsp. salt
1/4 c. orange juice
2 1/2 tsp. vanilla extract

Core, peel and thinly slice apples. Place in a medium bowl. Toss with 5 tablespoons sugar and the cinnamon. Set aside. In a large mixing bowl, mix remaining ingredients in order given. Batter will be thick. Grease and flour a Bundt or tube pan. Beginning and ending with batter alternately layer apples and batter. Pour juice remaining in apple bowl over top of cake. Bake at 350 degrees until tests done, 1 hour and 45 minutes.
