CARROT TORTE
 

3/4 c. sugar
12 eggs, separated
6 tbsp. grated carrots
6 tbsp. grated almonds
6 tbsp. coarsely grated apples
3 tbsp. matzo cake flour
1 tsp. lemon juice

Preheat oven to 375 degrees. Mix sugar with the egg yolks until light in color and creamy. Add the grated carrot, almonds and apple and fold in the cake flour. Add the lemon juice. Beat egg whites until stiff and fold them into the batter. Grease a 10 inch spring form pan and sprinkle it with matzo meal. Pour in the mixture. Bake until a cake tester inserted comes out clean, about 45 minutes. Yields: 12 servings.
