1 apple, peeled, cored, and grated 4 c. grated carrots 1 tbsp. pearl barley 1/2 c. butter, melted 1/2 c. water 2 tsp. sugar 1 tsp. lemon juice 1/4 tsp. nutmeg 1/2 tsp. salt Combine all ingredients in heavy saucepan. Bring to boil, turn down heat, cover pan closely, and simmer over low heat until barley is soft, about 2 hours. Check liquid from time to time, adding more water if necessary. Serves 6. |
