POTATO CHAMPS
 

6 med. potatoes
6 green onions
1 1/4 c. milk
1 tsp. salt
1/8 tsp. white pepper
4 pats butter (butter)

Peel and cut potatoes in thirds. Boil covered 20 minutes. Dry by placing uncovered over heat. Mash.

Chop green onions fine using tops, too. Cover with boiling water to hold color. Drain. Add to milk, salt, and pepper. Heat to boiling. Pour into mashed potatoes. Beat until fluffy.

Turn into a serving bowl. Make a depression in the center with a spoon. Place butter in the center. Serve hot.
