3 lg. sweet potatoes 1 c. sugar 1/4 c. butter 1/2 tsp. allspice 1 tsp. cinnamon 1/4 tsp. ground nutmeg 2 c. milk 2 eggs 1/2 c. flour 1/2 c. sugar 1/4 c. butter 1/2 c. chopped pecans 1/2 tsp. cinnamon Butter Cook sweet potatoes in boiling water until tender. Mash them while hot. Add 1 cup sugar, 1/4 cup butter, 1 teaspoon cinnamon, the allspice and nutmeg; mix well. Beat in milk and egg; whip well with electric mixer. Turn into greased pan. Combine flour, 1/2 cup sugar and 1/4 cup butter until crumbly. Mix in pecans and 1/2 teaspoon cinnamon. Sprinkle over top of sweet potatoes mixture. Dot with butter. Bake in oven at 375 degrees for 35-40 minutes. TOPPING: 1 c. brown sugar 1 c. chopped pecans 1 stick butter 1/2 c. flour Mix well; will be crumbly. Place on yams and bake at 350 degrees for 30 minutes after yams have already been baked at 375 degrees. |
