Wash cauliflower and remove any wilted outside leaves. With small sharp knife, remove most of core from the bottom. Place in pyrex mixing bowl. Pour 1/2 cup water and 1/4 cup vinegar over cauliflower. (Pickle juice can be substituted). Dot with low calorie butter and paprika. Cover with plastic wrap and microwave about 15 minutes, turning every 3-4 minutes. Check for tenderness. Spoon liquid over any dry parts and continue to cook covered, until tender. This recipe does not call for salt. |
