1 (18") spaghetti squash 1 c. chopped onion 2 cloves crushed garlic 1/2 lb. sliced mushrooms Broccoli flowers, broken into sm. pieces to your liking 1/2 tsp. oregano Salt & pepper to taste 1 c. cottage cheese or ricotta 1 c. grated mozzarella 1/2 c. parsley 1 tsp. basil Dash of thyme Whole wheat bread crumbs Parmesan (to your taste) Cut squash in 1/2. Remove seeds. Bake at 375 degrees for 30 minutes. Remove vegetable meat from shell, saute onions, garlic, with salt and pepper, mushrooms, broccoli and spices. Combine all ingredients. Pour into buttered 2 quart casserole dish. Top with lots of grated Parmesan cheese, bread crumbs (whole wheat). Bake at 375 degrees for 40 minutes (uncovered). |
