EGGPLANT AND NOODLE CASSEROLE
 

1 lb. noodles
2 eggplants
1 c. Parmesan cheese
1 pkg. Mozzarella cheese (sliced)
1 jar Prego or any brand spaghetti sauce
1 lb. ground hamburger
3 eggs
1 can bread crumbs

Cook noodles and brown hamburger.

Fry sliced eggplant 3/4 inch slices rolled in bread crumbs and dipped in egg.

In bottom of pan put one layer of cooked noodles, then layer of sliced eggplant, then layer of sauce mixed with cooked hamburger, then sprinkle with Parmesan cheese.

Repeat this for three layers and top with Mozzarella cheese. Salt and pepper to taste. Bake 350 degrees for 40 minutes. Top with foil, make a tent so won't stick to cheese. Last 10 minutes, remove foil.
