SQUASH AND POTATO CASSEROLE
 

8 to 10 summer squash
6 to 8 med. new potatoes
1/2 c. chopped onion
1/2 c. bell pepper (optional)
2 tbsp. Mazola Oil
2 tsp. sugar
Salt and pepper to taste

In casserole dish put oil. Add onions and pepper. Slice squash. Peel and wash potatoes, cut into 1/2 inch cubes. Salt anise pepper. Add sugar and lightly mix all ingredients. Cover and bake at 350 degrees about 40 minutes or until vegetables are tender.
