8 c. squash, sliced 2 c. onion, sliced 1 tbsp. salt 1/2 c. green pepper, diced 1 c. cider vinegar 1 3/4 c. sugar 1/2 tsp. celery seed 1/2 tsp. mustard seed Combine squash and onion; sprinkle with salt. Let stand 1 hour. Combine green peppers, vinegar, sugar, celery seed and mustard seed, and bring to boil. Add squash and onions to hot mixture, and return to a boil. Pack in hot jars and seal. Makes 2 quarts. Do green tomatoes and zucchini same way. |
