SWEET POTATO SOUFFLE
 

3 c. mashed sweet potatoes
1/2 to 3/4 c. sugar
2 eggs, beaten
1/2 tsp. salt
1/2 stick butter, melted
1/2 c. milk
1 1/2 tsp. vanilla flavoring
Cinnamon & nutmeg (as much as you like)

Mix well. Pour into baking dish and add following topping. 1/3 c. plain flour 1/3 stick butter, melted 1 c. broken nuts 1 c. flaked coconut (opt.)

Mix well the sugar and flour. Add melted butter and nuts. Sprinkle over souffle. Bake at 325 to 350 degrees for 25 minutes.
