STUFFED GREEN PEPPERS
 

5 lg. green peppers, washed & cored
1 lb. ground and skinless turkey
1/4 c. Hunt's BBQ sauce
1 c. cooked rice (or any cooked grain - pilaf, barley, etc.)
1/4 c. "Eggbeaters" or 1 egg white
Italian seasoning to taste

SAUCE:

1 c. catsup (or tomato sauce)

Place peppers into an electric crock pot. Mix ground turkey, BBQ sauce, rice Eggbeaters or egg together. Spoon mixture carefully into peppers, taking care not to tear the peppers. Pour "sauce" into crock pot between peppers as well as a bit on the top of each pepper.

Heat on Automatic for 6 hours, or on Low for 6 to 8 hours.

BBQ SAUCE ALTERNATIVE:

Mix with meat: 1/4 cup ketchup, 1 small minced onion, celery seed, 1/2 teaspoon minced basil, 1/8 teaspoon ground pepper.
