RED MASHED POTATOES
 

4 med. peeled baking potatoes, cut into 1 1/2" pieces
1/3 c. skim milk
1/4 c. plain nonfat yogurt
2 tbsp. butter
1/4 tsp. salt
1/8 tsp. pepper

Cook potatoes in boiling water for 30 minutes or until tender; drain. Combine potatoes, skim milk, yogurt, butter, salt and pepper; beat with electric mixer, about 1 minute or until almost smooth. Fat 1.6, Cholesterol 0.
