3 med. chayotes 1/2 med. onion, minced 1 tomato, peeled and chopped 1 clove garlic, minced 1/4 c. butter 3/4 c. grated Parmesan cheese Salt and pepper Peel chayotes and cut into 1/2 inch cubes. Cook in a small amount of water until tender, about 10 minutes. Drain. Cook onion, tomato and garlic in butter until onion is tender but not browned. Add to chayotes along with cheese and heat until cheese melts. Add salt and pepper to taste. |
