PAN FRIED POTATOES
 

8-10 potatoes
2 med. onions
1/4 c. oil

Peel potatoes and slice. Peel onion and cut in pieces. Place oil in iron frying pan, heat. Put potatoes in pan. Place lid on pan and turn heat to medium. Cook for approximately 15 minutes turning as needed. Put onions in pan, replace lid, and adjust heat as needed. Potatoes will cook in 20-25 minutes, stir as needed to prevent burning. When done, place potatoes in colander to drain oil from them. Salt and pepper to taste.
