SWEET POTATO PUFF
 

2 lb. sweet potatoes, cooked & mashed
2 tbsp. butter
3/4 c. milk
2 eggs, separated
1/4 c. brown sugar
1/4 c. syrup (maple flavored)
1/4 tsp. salt & pepper

Whip potatoes with butter, salt, pepper, milk, egg yolks, brown sugar, and syrup. Whip egg whites until stiff and fold into whipped potatoes. Put into greased casserole. Top with the following mixture: 1/2 c. brown sugar 1 c. chopped pecans

Bake at 325 to 350 degrees for 35 to 45 minutes.
