3 raw potatoes, grated 2 beaten eggs 1/4 tsp. baking powder 1/8 tsp. pepper 1/2 - 1 c. grated onion (to taste) 2 tbsp. flour 1 1/2 tsp. salt Peel and grate potatoes, drain off excess liquid that collects. Mix flour, baking powder, salt and pepper. Add to potatoes along with eggs. If batter is too thin, add a little more flour. Drop by tablespoon or 2 into 1/4" deep hot fat in heavy skillet. Cook over medium heat until golden brown. Turn over and brown other side. Drain on paper towels. |
