BAKED ZUCCHINI SQUASH
 

4 lb. zucchini squash
1 lb. sliced Mozzarella cheese
1 (15 oz.) can tomato sauce
1/4 can water
1/4 c. salad oil
1 tsp. oregano
1 tsp. salt
1 tsp. pepper

Spread salad oil in bottom of oblong baking dish. Mix tomato sauce, water and seasonings. Alternate layers of sliced squash, cheese and sauce mixture. Cover with tin foil and bake at 350 degrees for 45 minutes to an hour.
