Low cal, low cholesterol. 1 lg. sweet potato 1 egg white 1 tbsp. chili powder 1/2 tsp. ground red pepper (opt.)
1. Cut the potatoes into thin fries.
2. Lightly beat the egg white with a fork until foamy. Stir in the chili powder and pepper. Add potatoes and toss to coat well.
3. Using a non-stick cookie sheet (or one sprayed with Pam), spread the potatoes in a single layer. Bake at 450 degrees for 30 to 35 minutes or until crisp and brown. Serves 4.
