1/4 c. butter 1/2 c. chopped carrot 1/2 c. chopped celery 1 clove garlic, mashed 1 c. uncooked bulgar wheat 1 c. orange juice 1 c. water 2 c. black beans, cooked and drained 1/4 lb. fresh mushrooms, sliced 1/3 c. raisins 1/4 c. wheat germ 2 fresh oranges, peeled and sectioned In a large skillet melt butter over medium heat and saute onion, celery and garlic for 1 minute. Add bulgar and continue to cook, stirring, for 5 minutes. Stir in orange juice and water and bring to a boil. Add black beans, mushrooms, raisins and wheat germ, reduce heat and simmer, covered, 15-20 minutes until bulgar is tender and all liquid is absorbed. Spoon into serving dish and garnish with orange slices. Note: This mixture is excellent as a stuffing for whole tomatoes, green peppers and acorn squash. Yields 12 servings. |
