4 med. sweet potatoes 1/4 c. light corn syrup 1/4 c. butter, melted 1/2 tsp. salt Dash of ground cinnamon Pierce potatoes with a fork. Bake in a preheated oven 400 degrees until tender. Cut an oval in the top of each potato. Scoop out potatoes, reserving skin. Mash potatoes in a bowl. Add corn syrup, butter and salt; stir until smooth. Spoon mixture into skins, sprinkle with cinnamon. Bake in preheated oven for 15 minutes. Excellent for holiday meals. |
