Tzimes is a word that means, well, a big to-do, as in "it's only of it". A carrot Tzimmes is a sweet concoction served alongside the main dish. 3 tbsp. butter 1/2 tsp. salt 1 c. water 1/2 c. raisins 1 c. prunes, pitted 6 tbsp. brown sugar 1/2 tsp. cinnamon 1/4 tsp. cloves 1 tbsp. lemon juice Grated peel of 1 orange 2 tbsp. honey
Peel and slice the carrots into 1/8 inch slices. Melt butter in a medium large saucepan and saute the carrots for 5 minutes. Add the sugar and water; bring to a boil. Stir in the remaining ingredients and simmer, covered, for 2 hours. After 2 hours, remove the lid and cook 20 minutes more.
The Tzimmes should be moist but not too soupy. Serves 8.
