FRIED SQUASH
 

4-5 med. squash, cooked and drained
5 tbsp. chopped onion
1 egg, beaten
Salt and pepper to taste
Flour
Deep fat for frying

Mash squash after draining well. Stir in onions, egg, salt, and pepper, blending well. Add just enough flour to hold mixture together.

Form into small balls. Deep fry a few at a time until golden brown. Drain well and serve hot. Makes 4 servings.
