6 med. sized potatoes 2 eggs 1 med. onion 1 med. carrot 1/2 c. flour Oil (to cover bottom of pan) Salt and pepper to taste Wash potatoes; pat with towel to dry. Grate potatoes and carrot into large bowl. Grate onion. Heat oil in frying pan. Add flour, eggs, salt and pepper. Mix all ingredients. Put mixture by large spoonfuls into pan. Fry until golden brown. Turn and fry other side until golden brown. Put latkas on paper towels to drain oil. 8 servings. |
